Having produced other Mezcal called Sacapalabras, Eduardo, nicknamed Lalo, has been working on producing his own brand for over 14 years: Lalocura. His focus lies with entirely ancestral production methods and insists on respecting the noble maguey by allowing the pure flavours to be tasted and not to be manipulated through aging. Lalo’s laws are a great way to ensure you’re tasting good Mezcal: minimum 45% ABV, less than 2000l batches, cooked in underground pits and a few others rules too but these I think are certainly the most important to finding good Mezcal!
