Fully fermented in oak barrels, Paul Bara's new tête du cuvée, first produced with the 2004 vintage, is a salute to cooper Auguste François Bara, the family's first ancestor in Bouzy (his wife was named Annonciade). It is fermented fully in oak barrels. It is a bright, gold colored champagne with fine and abundant bubbles. It has a complex nose of ripe fruits, buttery apples (tarte tatin) and well-integrated oak with a delicate note of vanilla. The palate reveals good initial intensity, with a full texture and nice tension. Beautifully long with a distinguished bitterness on the finish.
