The terroir is clay-limestone with rolled pebbles or pebbles, heated by the sun, which providentially diffuse a gentle heat, promoting the maturity of the grapes.
In the vineyard
The vineyard has been worked for 40 years using environmentally friendly methods. The yield is low: 35 hl/ha.
The harvest is carried out by hand in the morning when the grapes are at the coolest temperature, with a selection of the best grapes.
The harvest is directly pressed. Fermentation at low temperature to extract the aromas of the grapes. Vinification for 25% in 400 liter barrels. Vinification without sulphites.
Aging for 5 months for 25% in 400 l barrels.
Malolactic fermentation carried out.
Bottled at the Domaine by us.
