Chablis
This months Spotlight is Chablis. Chablis is a semi-continental region in northwest Burgundy, France that is known for producing dry white wines from the Chardonnay grape. The cool climate of Chablis gives its wines a lean, acidic, and sometimes "flinty" nature, with less fruitiness than Chardonnay wines grown in warmer regions. Chablis wines are also described as having a "nervy", "fresh", or "energetic" quality, with aromas of citrus and white flowers, and light-bodied flavors of citrus, pear, minerality, and salinity.
