Hinotori 5 Year Blended Japanese Whisky was developed with a mission: coming back from its ashes is exactly what the Hekinan Distillery, located in Aichi and founded in 1949, is doing by releasing a limited 5 year old batch made from malt and grain in a pot still. Aging takes place in used whisky barrels for 5 years to allow gentle and smooth aromas to develop. Fresh and fruity on the nose with a hint of apple and pear. The palate is smooth and medium bodied with a light vanilla taste on the finish.
Hinotori means "Phoenix" in Japanese. It is distilled by the small distillery of the same name "Hinotori" which rises from its ashes after a stop of its production. Founded in 1949, it launches for its 70 years this limited vintage. Made on the island of Honshu, this grain whisky (60% corn, 10% wheat) and malt whisky has been aged in new American white oak barrels for 5 years.
