
2019 Chateau Mere Saperavi by Winiveria
Winemaker Notes: Following hand-harvest and crushing, grapes were fermented on skins for one month in qvevri. Aging and stabilization followed for a full year prior to release. The winemaking process for Saperavi uses traditional Georgian Qvevri, large earthenware vessels buried in the soil, for fermentation and aging. Hand-picked Saperavi grapes are crushed and placed in the Qvevri along with the stalks, seeds, and skins, allowing for a natural fermentation process. The manual stirring during fermentation enhances the wine's flavor. The unfiltered wine reflects the true essence of Saperavi grapes and the Kakheti Wine Region. Chateau Mere's Saperavi Qvevri has a deep color, robust body, and a pleasant finish. It pairs well with rich dishes like poultry, fowl, and grilled steak. It embodies Georgian winemaking tradition and the region's unique microclimate.
