Winemaker Notes:  Following hand-harvest and crushing, grapes were fermented on skins for one month in qvevri. Aging and stabilization followed for a full year prior to release. The winemaking process for ​Saperavi uses traditional ​Georgian Qvevri, large earthenware vessels buried in the soil, for fermentation and aging. Hand-picked Saperavi grapes are crushed and placed in the Qvevri along with the stalks, seeds, and skins, allowing for a natural fermentation process. The manual stirring during fermentation enhances the wine's flavor. The unfiltered wine reflects the true essence of Saperavi grapes and the ​Kakheti Wine Region. Chateau Mere's Saperavi Qvevri has a deep color, robust body, and a pleasant finish. It pairs well with rich dishes like poultry, fowl, and grilled steak. It embodies Georgian winemaking tradition and the region's unique microclimate.
