Producer Notes:  In Italian “PIANTE/SPARSE” literally means “spare vines”, which perfectly describes the vines used in this unique wine. Nobody knows why the old-times co-planted individual white varietals within the red varietal vineyards, but Ayunta farms, harvests and vinifies the grapes from these vines separately to produce this unique wine. Fermented and aged in stainless steel vat to maintain the unique balance of fresh acidity an intriguing mineral core.

Acidity, freshness and a prominent mineral body are the main characteristics of its personality. Timing is everything in the production of this wine: guessing the perfect ripening moment of all the different plants of the different grape varieties. This is why it is a very rare wine, produced only in the best vintages and just in case of perfect balance in the grapes.
